A simple but satisfying breakfast plate featuring crispy pork belly thins, soft fried eggs, ripe avocado and sweet blistered tomatoes. A balanced, low-effort dish that lets quality ingredients shine.
Ingredients

4–6 slices pork belly thins (1 pack)

2 large free-range eggs
- 1 ripe avocado, sliced
- A handful of cherry tomatoes on the vine
- Olive oil
- Sea salt and freshly ground black pepper
- Optional: chilli oil or chilli flakes
Directions
- Heat a frying pan over a medium heat. Add the pork belly thins and cook until golden, crisp and well-rendered. Remove from the pan and keep warm.
- In the same pan, add the cherry tomatoes and cook gently until blistered and just softened. Remove and set aside with the pork belly.
- Add a little olive oil to the pan if needed, then fry the eggs to your liking, seasoning with salt and black pepper.
- Arrange the pork belly thins on a plate alongside the fried eggs, sliced avocado and blistered tomatoes. Finish with an extra crack of black pepper and a drizzle of chilli oil if using.
