Air Dried Ham & Duck Egg Bagels

A rich and indulgent breakfast bagel topped with cooked ham, a golden fried duck egg and a finishing sprinkle of parmesan and spring onions. Simple, satisfying and perfect for a slow weekend brunch.
Ingredients
- 2 plain bagels, halved

4-6 slices of air dried ham (1 pack)
- 2 duck eggs
- A small handful of grated parmesan
- 2 spring onions, finely sliced
- Butter or olive oil, for cooking
- Freshly ground black pepper
Directions
- Slice the bagels in half and lightly toast or pan-toast until golden on the cut sides.
Heat a frying pan over a medium heat with a little butter or olive oil. Add the air dried ham slices and warm gently until lightly caramelised, then remove and set aside.
- In the same pan, crack in the duck eggs and fry until the whites are just set and the yolks remain rich and runny. Season with black pepper.
- Top each bagel half with warm ham, then place a fried duck egg on top. Finish with a generous sprinkle of parmesan and sliced spring onions.
- Serve immediately while warm.
