Air Dried Ham & Duck Egg Bagels

Ingredients

  • 2 plain bagels, halved
  • 4-6 slices of air dried ham (1 pack)

  • 2 duck eggs
  • A small handful of grated parmesan
  • 2 spring onions, finely sliced
  • Butter or olive oil, for cooking
  • Freshly ground black pepper

Directions

  1. Slice the bagels in half and lightly toast or pan-toast until golden on the cut sides.
  2. Heat a frying pan over a medium heat with a little butter or olive oil. Add the air dried ham slices and warm gently until lightly caramelised, then remove and set aside.

  3. In the same pan, crack in the duck eggs and fry until the whites are just set and the yolks remain rich and runny. Season with black pepper.
  4. Top each bagel half with warm ham, then place a fried duck egg on top. Finish with a generous sprinkle of parmesan and sliced spring onions.
  5. Serve immediately while warm.
