A 65g sliced pack of ready to eat British free range pork shoulder. A perfect cured meat to compliment the most luxurious of charcuterie platters.
The fat of this ham gives it a beautiful creamy flavour, together with the red wine notes taken from the process we use of bathing the ham in wine of the Troodos Mountains for over a week to take on its lovely flavour.
Spiced in a unique seed found on the Turpentine tree of Cyprus. Known as ‘Tremithia’ this seed is blended into a paste and liberally coated to give a nutty flavour with a back note of heat.
Oak smoked in our walk in converted grain silo smokehouse and cased within a natural beef casing where it is left to age in our ageing room for 3-4 months. Capocollo or Coppa as it is known by our Italian counterparts is made using the shoulder of pork which we believe is the by far the best cut!
All our products are shelf stable, meaning there’s no refrigeration required and have 6+ months shelf life. In fact all our products eat better when at room temperature. We recommend refrigeration once the pack has been opened, that’s if you have any left to refrigerate!
